Recipe: Cilantro Lime Shrimp Tacos
Ingredients:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
1/4 cup chopped fresh cilantro
Juice of 2 limes
8 small corn or flour tortillas
Optional toppings: shredded cabbage, diced avocado, feta or cotija cheese, sour cream, salsa
Instructions:
In a large bowl, toss the shrimp with olive oil, minced garlic, ground cumin, chili powder, salt, and pepper.
Heat a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.
